Mycotoxins in nuts

چکیده

Nuts are among the crops that can be contaminated by aflatoxins (AFs), mycotoxins mainly produced by A. flavus and A. parasiticus. These fungi are well adapted to tropical and sub-tropical areas and tend to contaminate damaged or stressed crops. Both peanuts and pistachio nuts are well protected by their shells during the growing season, but damage caused by parasites, or early split in pistachio nuts, can result in contamination by Aspergilli in field. The amount of AFs in nuts can also increase considerably during harvest/post-harvest. As well as careful crop management, promising results in reducing AFs contamination have been achieved applying biological control in field. Sorting can effectively reduce AFs, but a high percentage of production is discarded, which is not always contaminated at unacceptable levels. Decontamination is difficult; it frequently leads to limited results or variations in the edibility or quality of nuts.

Mycotoxins in foods and feeds in the United States.

Mycotoxins are considered unavoidable contaminants in foods and feeds because agronomic technology has not yet advanced to the stage at which preharvest infection of susceptible crops by fungi can be eliminated. The aflatoxins have received greater attention than any of the other mycotoxins because of their demonstrated carcinogenic effects in susceptible animals and their acute toxic effects i...

Biology and ecology of mycotoxigenic Aspergillus species as related to economic and health concerns.

The fungal genus Aspergillus was established in 1729, and includes species that are adapted to a wide range of environmental conditions. Many aspergilli produce mycotoxins in foods that may be toxic, mutagenic or carcinogenic in animals. Most of the Aspergillus species are soil fungi or saprophytes but some are capable of causing decay in storage, disease in plants or invasive disease in humans...

Static Hot Air and Infrared Rays Roasting are Efficient Methods for Aflatoxin Decontamination on Hazelnuts

Aflatoxins are a group of secondary metabolites produced by members of Aspergillus Section Flavi that are dangerous to humans and animals. Nuts can be potentially contaminated with aflatoxins, often over the legal threshold. Food processes, including roasting, may have different effects on mycotoxins, and high temperatures have proven to be very effective in the reduction of mycotoxins. In this...

Food Mycotoxins: An Update

Unavoidable, natural contaminants in foods may have either chemical or biological origin. Mycotoxins—toxic secondary metabolites of fungi—are biological in origin. Despite efforts to control fungal contamination, toxigenic fungi are ubiquitous in nature and occur regularly in worldwide food supplies due to mold infestation of susceptible agricultural products, such as cereal grains, nuts, and f...
